Paul's "Naughty" Chicken Wings
The Chinese word translated here as "naughty" is the same as in the
Frugal Gourmet's "Lewd" (looed) Chicken. Traditionally, pork
(cubed or ground) and peeled hard-boiled eggs are simmered in this
sauce until the brown color permeates the whites of the eggs. I use
chicken wings because I usually make this dish for parties, and wings
are a little easier to handle as finger food. You can use the same
batch of sauce for more than one batch of wings in succession.
Ingredients
- 1 jumbo pack (4-5 lb.) chicken wings
- 1 c soy sauce
- 1 c wine
- 2/3 c sugar
- 1 finger ginger, grated
- 4 cloves garlic, pressed
- 1/2 t Chinese Five Spice
- water
Procedure
- Separate the wings at the elbow.
- Combine all ingredients except wings and water in a large pot.
- Add wings, then add water enough to cover.
- Let marinate a few hours/overnight.

Bring to a boil, then cover and simmer until very tender (20 min.?).
Or use a slow cooker, skipping the marinating period.
