FoodLinks, an initiative of the International Development Research Centre in Ottawa, Canada, requires the services of a food scientist/technologist for a short term project in the Northern Areas of Pakistan.

The project will be assisting local farmers in improving the marketability of their very sweet dried apricots to high-income consumers and markets in Pakistan and abroad. The first phase, beginning in mid-July until mid- September, 1996, will be reviewing and improving the processing and marketing of the dried fruit, from the harvesting stage through to the drying, preservation, packaging and distribution.

We are looking for a food scientist (or similar) with skills and experience in fruit and/or vegetable drying and processing to join the team. The ideal candidate will:

- be female: to work with local village women, who are involved in all aspects of apricot production except marketing. - speak Urdu: to work with local farmers and processors - have a Food Science background (or similar), with experience in apricot (or other fruit or vegetable) production, preservation, processing and packaging. - have good communication skills working with a broad range of people (farmers, project staff, academics) - have good writing skills in English - be able to work in rural areas where there may not be many amenities

The successful candidate will be responsible for:

a. developing, in conjuction with a Canadian food science team member, a research plan for the field work; b. conducting field research and pilot testing of a new apricot processing protocol; c. assessing alternative uses (jams, chutneys, candy, fruit bars, etc.) of the many varieties of apricots grown in the Northern Areas; d. analyze research results, develop a revised Apricot Processing Protocol, and provide recommendations on further steps needed to market the apricots to higher-income consumers in Pakistan and abroad.
